Anxiety: Ginger Molasses Cookies

Preheat oven to 375°

2 c flour

2 tsp baking soda

2 tsp ground cinnamon

5 tsp ground ginger

1 tsp ground cardamom

1/2 tsp salt

1 large egg

1/2 c unsalted butter

1/3 c granulated sugar

1/3 c dark molasses

1/4 c packed dark brown sugar

 

Whisk flour, baking soda, cinnamon, ginger, cardamom, and salt in small bowl. Combine egg, butter, molasses, and white and brown sugar in large bowl. Mix in the dry ingredients.

Scoop one inch balls and place two inches apart onto parchment lined cookie sheet. If dough is too sticky, place in refrigerator
for 30 minutes

Bake 7-9 minutes until cookies are puffed and set around the edges.
