Disappointment: Parmesan Basil Cookies

Preheat oven to 350°

1/2 pound unsalted butter, softened

4 egg whites, room temperature

1/2 c + 2 T sifted flour

1/4 c granulated sugar

2 tsp salt

2/3 c freshly grated parmesan

1 1/2 T dried basil


Cream butter, sugar, and salt. Add egg whites one at a time and mix well. Add flour, parmesan, and basil to egg mixture and blend until smooth. Place dough in refrigerator for 30 minutes. 

Scoop tablespoons of dough onto parchment lined cookie sheets and flatten with the back of a spoon. 

Bake 10-15 minutes until edges are golden.
