Passion: Salted Caramel Dark Chocolate Cookies

Preheat oven to 350°

1/2 c unsalted butter, room temp

1/2 c granulated sugar

1/2 c dark brown sugar

1 large egg

1 tsp vanilla extract

1 c flour

2/3 c unsweetened cocoa powder

1 tsp baking soda

1/8 tsp salt

2 T milk

1 1/2 c dark chocolate chips

16-17 caramels


Cream butter and sugars. Beat in egg and vanilla. In separate bowl, combine flour, cocoa, baking soda, and salt. Gradually add flour mixture to wet ingredients. Stir in the milk. Fold in the chocolate chips. Chill dough 1-2 hours.

Take 2 tablespoons of dough, split it in half, and roll each half into a ball. Stick a caramel into one of the balls. Top the caramel with the other dough ball and seal the sides so the caramel is stuffed in the center. Place on cookie sheet lined with parchment paper. Sprinkle each cookie with salt before placing in the oven

Bake 12-13 minutes. Let cookies cool on baking sheet for 5 minutes before moving.
