Wonder: Chocolate Mint Meringues
Preheat oven to 200°
4 egg whites, room temp
1 T white vinegar
1 T cornstarch
1 c granulated sugar
3/4 tsp peppermint extract
1 drop green food coloring, gel
6 oz chocolate
In mixing bowl, whisk egg whites for 30 seconds until frothy. Add vinegar and cornstarch. Whisk with electric mixer for one minute. While beating, add sugar in a slow, steady stream. Add peppermint extract and food coloring. Beat on high for four minutes until stiff peaks form. Drop spoonfuls onto cookie sheet lined with parchment paper or use a pastry bag with a tip to pipe onto cookie sheets.
Bake for 80 minutes. Turn oven off and allow meringues to set for 4 hours or overnight.
Melt chocolate and dip meringues into it. Return meringues to parchment paper to set.
